Satay Chicken Burgers

Ingredients

  • 1 tsp
    ground cumin
  • 1 tsp
    ground coriander
  • 4x (800g)
    chicken thigh fillets
  • ¾ cup (210g)
    low-fat crunchy peanut butter
  • 1 tsp
    grated ginger
  • 3 tsp
    soy sauce
  • 2 tbsp
  • ½ cup (125ml)
    light coconut milk
  • Spray oil for cooking
  • ⅓ cup (95g)
    natural yoghurt
  • 1 tbsp
    chopped coriander
  • 4x
    burger buns
  • 1x (170g)
    medium cucumber, sliced into ribbons
  • 2 cups (40g)
    baby spinach

How to Cook

Prep Time: 10 minutes | Cooking Time: 15 minutes
  1. Place cumin, coriander and oil in a bowl. Add chicken and toss to coat. Cover and chill for 10 minutes.

  2. Meanwhile, place peanut butter, ginger, soy, MAGGI Sweet Chilli Sauce and coconut milk in a saucepan over medium heat. Stir for 3 minutes until combined. Cover and keep warm. Heat a non-stick frying pan over high heat. Cook chicken in batches for 5 minutes each side or until cooked.

  3. Next, in a small bowl, combine yoghurt and coriander; evenly divide between burger buns with cucumber and spinach; top with chicken and serve with extra peanut sauce.
