Brunch Fritters

Ingredients

  • 1 pkt
  • 4 + 4 extra
    eggs, lightly beaten
  • 1 (25g)
    spring onion, sliced thinly
  • 1 (120g)
    carrot, grated
  • 1 (200g)
    red capsicum, chopped finely
  • 1 (90g)
    zucchini, grated
  • 2 tsp
    vegetable oil
  • 4 (100g)
    shortcut bacon rasher
  • 1 cup (20g)
    baby spinach (sautéed, optional)

How to Cook

Prep Time: 5 minutes | Cooking Time: 10 minutes
  1. Cook MAGGI 2 Minute Noodles Chicken as per packet instructions, drain and keep warm.

  2. In a large bowl combine cooked MAGGI 2 Minute Noodles Chicken, eggs, spring onion, carrot, capsicum and zucchini.

  3. Heat oil in a frying pan on medium heat. Spoon 2 tbsp of fritter mixture into pan and cook for 2-3 minutes on each side or until golden and crunchy. Repeat with remaining mixture to make 4 fritters.

  4. Add bacon to cleaned frying pan and cook for 2 minutes on each side or until golden and crispy. Cook extra eggs sunny side up or until liking. Top noodle fritters with bacon, eggs and baby spinach.
