Mediterranean Lamb

Just Add

  • 2 tbsp
    canola oil
  • 1kg
    butterflied lamb leg
  • 1 1/2 cups (190g)
    butternut pumpkin, diced
  • 6 medium (500g)
    carrots, roughly chopped
  • 3 medium (500g)
    zucchini, roughly chopped
  • 2 medium (300g)
    red onions, cut into wedges
  • 1 large (190g)
    potato, cut into wedges.
  • 1
    lemon, cut in half

How to Make

Serves: 5 | Preparation time: 10 Minutes | Cooking time: 55 Minutes

  1. Pre-heat oven to 220°C (200°C fan forced) and line a 40cm x 30cm roasting pan with baking paper.

  2. Combine oil and MAGGI Mediterranean Herb Lamb Recipe Base in a large mixing bowl and mix well to a paste. Toss in lamb, pumpkin, carrots, zucchini, red onion and potato until evenly coated. Place on lined roasting pan & lemon.

  3. Bake for 55 minutes or until lamb is cooked through. Squeeze lemon over and serve. Garnish with fresh chopped sage if desired.
