Thick Vegetable and Pasta Soup

Ingredients

  • 1 tbsp
    olive oil
  • 2 medium (300g)
    onions, chopped
  • 1 clove
    garlic, crushed
  • 8 cups (2L)
    water
  • ¼ cup (60mL)
  • ¼ cup (70g)
    tomato paste
  • 2 stalks (120g)
    celery , chopped
  • 2 small (140g)
    carrots, chopped
  • 2 medium (400g)
    potatoes, cut into cubes
  • 1 cup (80g)
    shredded cabbage
  • 2 x
    tomatoes, chopped
  • 2 medium (240g)
    zucchini, chopped
  • ½ cup (90g)
    small soup pasta
  • 2 tbsp
    chopped parsley

How to Cook

Prep Time: 10 minutes | Cooking Time: 30 minutes
  1. Heat oil in a large saucepan over medium heat; add onion and garlic, cook 2 minutes.

  2. Add combined water, MAGGI Original Seasoning and tomato paste, bring to boil.

  3. Add celery, carrots, potatoes, cabbage, tomatoes and zucchini; simmer covered for 15 minutes.

  4. Add pasta, cook a further 10 minutes. Sprinkle with parsley before serving.
