Spicy Parsnip and Coconut Soup

Ingredients

  • 20g
    butter
  • 2 medium (300g)
    onions, peeled and roughly chopped
  • 3 medium (750g)
    parsnips, peeled and roughly chopped
  • red chilli, sliced
  • 1 tbsp
    wheat flour
  • 1 tsp
    ground cumin
  • 2 cups (500mL)
    vegetable stock
  • 375mL
    CARNATION Light & Creamy Coconut Evaporated Milk

How to Cook

Prep Time: 5 minutes | Cooking Time: 20 minutes
  1. Fry onions, parsnips and chilli in butter to soften, remove from heat and

  2. 2. Return to heat, add stock bring to boil, turn down heat and simmer for 10 minutes. Add CARNATION Light & Creamy Coconut Evaporated Milk.

  3. Process in food processor until smooth, if required, serve.
