Mushroom and Pea Pilaf

Ingredients

  • 1 tbsp
    vegetable oil
  • 1 onion
    chopped
  • 2 cloves
    garlic, chopped
  • 250g
    sliced mushrooms
  • 2 tbsp
    tikka masala paste
  • 1 cup (200g)
    basmati rice
  • 2 cups (500mL)
    water
  • 2 tsp
    chicken stock powder
  • 1 cup (120g)
    frozen peas
  • ½ cup
    chopped coriander
  • ½ cup
    natural yogurt, to serve
  • ¼ cup
    Toasted flaked almonds, to serve

How to Cook

Prep Time: 10 minutes | Cooking Time: 19 minutes
  1. Heat oil in large frying pan over medium heat. Add onion and garlic, cook 5 minutes or until softened; add mushrooms and paste, cook for a further 2 minutes.

  2. Add rice, water and stock powder, bring to the boil, turn down heat, simmer with lid on for 10 minutes. Add peas; cook for a further 5 minutes.

  3. Serve with coriander, yoghurt and almonds.
