Caramelised Onion & Baby Spinach Frittata

    onions, sliced
  • 1 tbsp
    brown sugar
  • 6
    eggs, lightly beaten
  • 1/4 cup (60mL)
    thickened cream
  • 5 cups (100g)
    baby spinach leaves
  • 1/2 cup (50g)
    parmesan cheese, grated

How to Cook

Prep Time: 5 minutes | Cooking Time: 12 minutes
  1. Melt butter in the pan add onions and cook over a medium heat for 5 minutes, or until soft and golden brown. Add sugar, stir until dissolved.

  2. Mix eggs, cream and seasoning, add to pan, cook over medium heat until bottom side is golden brown. Gently stir though spinach to coat with egg mix, add cheese and place under a preheated grill until set. Cut into wedges to serve.
