  • 3 large (660g)
    vine ripened tomatoes, sliced thickly
  • 2 large (120g)
    bocconcini, sliced thickly
  • ¼ cup
    small fresh basil leaves, loosely packed
  • ¼ cup (60mL)
    extra virgin olive oil

  1. Arrange tomato and bocconcini slices overlapping on a serving platter. Scatter over basil, drizzle with olive oil.
