Tuna and 2 Minute Noodle Frittatas

  • 1 x 85g can
    tuna in brine, drained.
  • 1 small (90g)
    zucchini, grated
  • 1 small (70g)
    carrot, grated
  • 1
    green onion (shallot), finely chopped
  • ¾ cup (90g)
    grated low fat cheddar cheese
  • 2
    eggs, beaten
  • 1/2 cup (125mL)

How to Cook

Prep Time: 20 minutes | Cooking Time: 20 minutes
  1. Preheat oven to 180°C/160°C fan forced. Grease six holes from a 12-hole (1/3 cup/80mL) muffin pan.

  2. Cook MAGGI 2 Minute Noodles according to packet directions; drain. Add to a large bowl with tuna, zucchini, carrot, green onion and ½ cup (60g) cheese. Pour in combined eggs and milk; mix until well combined.

  3. Divide mixture between prepared pan; divide any remaining liquid between muffins; sprinkle with remaining cheese. Bake 20-25 minutes or until golden.
