Salmon Fritters with Sweet Chilli Mayonnaise


  • 2 medium (400g)
    potatoes, chopped
  • 2 medium (240g)
    zucchini, grated
  • 1 can (105g)
    red salmon, drained, flaked, skin & bones removed
  • 1/2 cup (100g)
    corn kernels, drained
  • 1
    egg, lightly beaten
  • 1/2 cup (80g)
    pine nuts
  • 2 tbsp
    olive oil
  • 1/3 cup (100g)
    THOMY Delikatess Mayonnaise
  • 1 tbsp
    Sweet Chilli Sauce

How to Cook

Prep Time: 20 minutes | Cooking Time: 30 minutes
  1. Cook potatoes in boiling water 20 minutes or until cooked, drain and mash.

  2. Meanwhile, place zucchini in a large bowl with potato, salmon, corn and egg; mix well; form into 8 patties, coat on both sides with pinenuts.

  3. Heat oil in a large frying pan over medium heat; cook patties 3-4 minutes per side or until golden brown. Serve with combined Mayonnaise and sweet chilli sauce
