Portuguese Seafood Skewers

Ingredients

  • ½ cup (125mL)
    olive oil
  • ¼ cup (60mL)
    white wine vinegar
  • 2 tbsp
    whole red chillies finely chopped
  • 1 tsp
    garlic puree
  • 1 tbsp
    sugar
  • ½ tsp
    sea salt
  • 1 tsp
    oregano
  • ½ tsp
    ground paprika
  • 12 x
    green king prawns, peeled and deveined
  • 12 x (1kg)
    baby octopus
  • 12 x
    scallops, deveined
  • 2 x
    tuna steaks, each cut into 6 cubes
  • ⅓ cup (15g)
    chopped mint
  • spray oil for cooking
  • 12 x
    bamboo skewers, soaked in water for 10 minutes
  • ¼ cup (10g)
    chopped coriander

How to Cook

Prep Time: 20 minutes | Cooking Time: 10 minutes
  1. In a large bowl add oil, vinegar, chillies, garlic, sugar, salt, oregano and paprika mix thoroughly to combine. Add prawns, octopus, scallops, tuna and mint mix well, marinate for 10 minutes.

  2. Preheat barbecue plate or griddle pan on medium high. Evenly divide seafood between skewers. Spray barbecue with oil; cook skewers for 5 minutes each side, basting with remaining marinade.

  3. Garnish skewers with coriander.
