Zucchini & Bacon Frittata


  • 2 tbsp
    olive oil
  • 1 medium (150g)
    onion, sliced
  • 2 rashers (160g)
    bacon, trimmed and chopped
  • 1 clove
    garlic, crushed
  • 3 medium (360g)
    zucchini, thinly sliced
  • 2 small (240g)
    potatoes, cooked and thickly sliced
  • 1 pkt

  • 2 tbsp
    basil, chopped
  • 1/4 cup (60mL)
  • 1/4 cup (20g)
    parmesan cheese, grated

How to Cook

Prep Time: 20 minutes | Cooking Time: 20 minutes
  1. Heat oil in a large heavy based frying pan. Cook onion and bacon 2 minutes. Add garlic and zucchini and cook 3-4 minutes. Stir in potatoes.

  2. CombineMAGGI Tasty Cheese Sauce with eggs, basil and milk. Pour over vegetables, stirring a little to allow the mixture to coat all the vegetables.

  3. Cook over a moderately low heat, without stirring, until the eggs are set and the base is golden brown, but the top is still moist.

  4. Sprinkle with parmesan cheese and place pan under a preheated grill for 3-5 minutes or until the top is golden.
