Savoury Noodle Fritters

    eggs, lightly beaten

    shaved ham, thinly sliced
  • 1 (150g)
    red capsicum, finely chopped
  • 1 (120g)
    zucchini, grated
  • 1 (120g)
    carrot, peeled and grated
  • 2 (40g)
    spring onions, sliced thinly.
  • spray oil, for cooking

How to Cook

Prep Time: 10 minutes | Cooking Time: 10 minutes
  1. Break noodle cakes into quarters; place into a medium saucepan, cover with boiling water, cook 2 minutes. Drain well.

  2. Combine contents of flavour sachets and eggs in a medium bowl; add ham, capsicum, zucchini, carrot, green onion and noodles, mix well.

  3. Heat oil in a large fry pan; drop ΒΌ cup (60mL) of mixture into pan; cook 1 minute each side or until golden and egg is set; repeat with remaining mixture.

Serve fritters topped with extra sliced green onion and a green salad, if desired.
