Potato, Corn, Ham & Noodle Rosti

Ingredients

  • 4 medium (600g)
    potatoes, peeled, grated
  • 1
    egg
  • 125g can
    creamed corn
  • 1 (120g)
    carrot, peeled, grated
  • 100g
    ham, sliced
  • 1 tsp
    garlic puree
  • 2 (50g)
    spring onions (shallots), sliced thinly

How to Cook

Prep Time: 15 minutes | Cooking Time: 10 minutes
  1. Cook MAGGI 2 Minute Noodle Chicken, according to packet instructions, reserving flavour sachet; drain and keep warm.

  2. In a large bowl, add potatoes, egg, corn, carrot, ham, garlic and shallots. Stir in flavour sachet and mix well; fold through reserved noodles.

  3. Heat a small (18-20cm base measurement) non-stick frying pan over medium heat. Add the potato mixture and press down firmly. Cook for 15 minutes or until the base is golden brown and crisp.

  4. Slide the rosti out of the pan onto a large board. Flip the rosti over back into the pan so that the golden side is now uppermost. Cook for a further 15 minutes or until cooked through and the base is golden brown and crisp.

  5. Turn onto a serving plate, cut into wedges and serve immediately. If desired serve with green beans and tomatoes.
