Frittata with Noodles

Ingredients

  • 3 cups
    water
  • 1 pkt
  • 6
    eggs
  • 3 tbsp
    trim milk
  • 2 tsp
    olive oil or cooking spray
  • 3 slices
    reduced fat ham, chopped
  • 1/2
    red capsicum, chopped
  • 1 cup
    broccoli florets

How to Cook

Prep Time: 5 minutes | Cooking Time: 15 minutes
  1. Bring water to the boil in a small saucepan. Break the noodles and add to the pan. Cook for 2 minutes. Drain the noodles, rinse under cold water. Drain well.

  2. Combine contents of 2 Minute Noodles Chicken flavour sachet, eggs and milk. Beat together. Add noodles and stir to combine.

  3. Heat oil in a frying pan. Add ham, red capsicum and broccoli and toss over a medium heat for 1 minute. Add noodle mixture. Cook over a low heat until eggs are almost set.

  4. Place the pan under a preheated grill for 3-5 minutes or until the top of the frittata is set and golden brown.
