Crepes with Honey Figs

Ingredients

  • 1 cup (150g)
    plain flour, sifted
  • 1 cup (250mL)
    milk
  • 2 tbsp
    sugar
  • ¾ cup (190mL)
    water
  • 2 x
    eggs, lightly whisked
  • 1 tbsp
    butter, melted
  • for cooking
    Spray oil
  • ½ cup (125mL)
    honey
  • 5 x
    figs cut in half

How to Cook

Prep Time: 15 minutes | Cooking Time: 35 minutes
  1. In the jug of a blender add flour, milk, sugar water, eggs and butter, blend until well combined.

  2. Lightly spray a non-stick frying pan with oil, and place over medium heat. Pour in ¼ cup of batter and tilt pan so it makes a thin circle.

  3. Cook for 2 minutes, then flip and cook on the other side until golden. Remove from pan, transfer to a plate and place in a low oven to keep warm while you cook remaining crepes.

  4. Meanwhile in a medium frying pan add honey, bring to the boil, add figs and cook for 10 minutes or until figs have softened, and a syrup forms.

  5. Serve crepes with figs and sauce.
