Teriyaki Chicken With Soba Noodles


  • 270g
    pkt soba noodles
  • 2 tbsp
    brown sugar
  • ½ cup (125mL)
    soy sauce
  • 2cm piece
    ginger, chopped finely
  • 2 tsp
    garlic puree
  • ½ cup (125mL)
    vegetable oil
  • 1 tbsp
    wine vinegar
  • 500g
    chicken breast fillet, sliced
  • 2 tbsp
    peanut oil
  • 4cm piece
    fresh ginger, peeled, cut into thin matchsticks
  • 4x
    green onions (shallots), thinly sliced
  • 1½ cups (120g)
    bean sprouts

How to Cook

Prep Time: 15 minutes | Cooking Time: 10 minutes
  1. Cook noodles following packet directions; drain, rinse under cold water.

  2. In a medium bowl, combine sugar, soy sauce chopped ginger, garlic, vegetable oil and vinegar. Add chicken, mix well; marinate 10 minutes. Heat a wok over high heat. Add 1 tbsp peanut oil, add chicken, cook for 2 minutes or until cooked, remove from pan, set aside.

  3. Reheat wok on medium heat; add remaining peanut oil, ginger matchsticks and onion. Stir-fry for 1 to 2 minutes or until onion is soft. Return chicken and juices to wok. Add noodles; stir-fry 2 minutes or until noodles are heated through. Remove from heat; stir in bean sprouts. Serve.
