Prosciutto Wrapped Chicken On Smashed Broadbeans With Gravy

Ingredients

  • 1 tbsp
    Dijon mustard
  • 4 slices (60g)
    Prosciutto
  • 4 (800g)
    Chicken breast fillets, tenderloin removed, trimmed
  • 1 tbsp + 1 tsp extra
    Olive Oil, or butter
  • 1 clove
    Garlic, crushed
  • 1/4 cup (60mL)
    thickened cream
  • 500g
    Packet frozen broad beans
  • 1 cup (120g)
    Frozen baby peas, thawed
  • 1 sachet (30g)

How to Cook

Prep Time: 25 minutes | Cooking Time: 30 minutes
  1. Preheat oven to 180°C/160°C fan forced. Grease and line a large baking dish.

  2. Spread 1 tsp of mustard over each chicken breast. Wrap a piece prosciutto around each breast, secure with a toothpick, if required

  3. Heat oil in a large heavy-based frying pan over medium-high heat. Cook chicken breasts, 2-3 minutes each side or until browned lightly; then transfer to prepared tray. Bake 25-30 minutes or until cooked through.

  4. Meanwhile, remove broad beans from their outer shells. Heat extra oil or butter in a small frying pan, add garlic and sauté until fragrant, add cream, and bring to the boil. Add broad beans and peas, cook until softened and cream is reduced by half. Season with salt and pepper and using a potato masher or fork, lightly smash.

  5. Prepare MAGGI Homestyle Chicken With Herb Gravy as per packet instructions; serve chicken with broad bean smash and gravy.
