Mexican Chicken Noodle Bake

    bbq chicken, skin and bones removed, shredded
  • 1 pkt
  • 1 small (80g)
    onion, finely diced
  • 1 can (400g)
    chopped tomatoes
  • 1 can (300g)
    corn kernels, rinsed and drained
  • 1 can (400g)
    kidney beans, rinsed, drained
  • 1 large (200g)
    red capsicum, finely chopped
  • 1/2 cup
    tasty cheese, grated
  • 1/2 cup (120g)
    light sour cream
  • 1/4 cup
    fresh coriander leaves

How to Cook

Prep Time: 15 minutes | Cooking Time: 25 minutes
  1. Cook noodles as per instructions, drain and set aside.

  2. Combine chicken, MAGGI Chilli Con Carne Recipe Base, onion, tomatoes, corn, kidney beans, red capsicum and 2 minute noodles. Place in baking dish and top with cheese, bake for 20-25mins or until golden brown.

  3. Remove bake from oven and allow 5 minutes to slightly cool. Top with sour cream and coriander if desired.
