Satay Beef Skewers with Cucumber Salad

Ingredients

  • 1 tsp
    ground cumin
  • 1 tsp
    ground coriander
  • 500g
    beef steak, thinly sliced
  • ¾ cup (210g)
    low-fat peanut butter
  • 1 tsp
    grated ginger
  • 3 tsp
    soy sauce
  • 2 tbsp
  • ½ cup (125mL)
    light coconut milk
  • 1 tbsp
    rice wine vinegar
  • 1 tbsp
    brown sugar
  • 1 tbsp
    water
  • 2 (280g)
    Lebanese cucumbers, halved lengthways, thinly sliced
  • 1 long
    red chili, halved seeded and thinly sliced
  • ⅓ cup (15g)
    fresh mint leaves
  • 12
    bamboo skewers, pre soaked
  • spray oil for cooking

How to Cook

Prep Time: 15 minutes | Cooking Time: 6 minutes
  1. Place cumin and coriander in a bowl. Add steak, toss to coat, cover and set aside.

  2. Meanwhile, place peanut butter, ginger, soy, MAGGI Sweet Chilli Sauce and coconut milk in a saucepan over medium heat. Stir until combined. Cover and keep warm.

  3. Combine vinegar, sugar and water in a small bowl; stir until sugar disolves. Add cucumber, chilli and mint, stir to combine. Set aside.

  4. Thread steak onto prepared skewers. Heat a BBQ flat plate or large frying pan. Spray with oil. Cook for 2 -3 minutes each side or until cooked through.

  5. Serve skewers with satay sauce and cucumber salad.
