Quesadillas Recipe



  • 1
    red chilli, halved lengthways, deseeded and chopped
  • 1 tsp
    crushed garlic
  • 400g
    beef mince
  • 1 tsp
  • 1 tsp
  • 1 Can (400g)
    chopped tomatoes
  • 1 small
    carrot, grated
  • 1 small
    zucchini, grated
  • 1 tsp
    brown sugar
  • 8 small
  • 1/2 cup (60g)
    tasty cheese, grated

How to Cook

Prep Time: 5 minutes | Cooking Time: 25 minutes
  1. Heat large frying pan over high heat, spray with oil, add and mince, garlic and half of the chilli, cook for 5 minutes or until mince is browned. Add carrot, capsicum, cumin, oregano and half the tomatoes, turn down heat and simmer for 2 minutes.

  2. In a medium bowl, to make the salsa, combine remaining chilli, tomatoes, and sugar. Place one tortilla into a non-stick frying pan on medium heat, top with 1/8 of the mince and cheese fold over to form a half circle and cook for 1 minute each side. Keep warm while repeating process with remaining tortillas. Top with tomato salsa.
