We all know that MAGGI 2 Minute Noodles are sensational for a quick snack stop when you are pushed for time. But they are also a great pantry staple to help out when the shelves are looking a little bare and uninspiring.
It’s times like this that simple recipes like this easy cheese & vegetable noodle slice come in. It is a great example of not only how to make food tastier but also how to make food go further.
To make this recipe the first thing you need to do is heat the oven, and in the time it takes for it to heat you can prepare the ingredients. First up, cook the noodles according to pack instructions, just don’t add the flavour sachet at this stage as you will need it later.
That will give you two minutes to grate the zucchini and carrot.
When cooked drain and add the noodles to a bowl with zucchini and carrot. Next up add 4 lightly beaten eggs, the flavour sachet and ¾ cup of grated cheese.
Pour this mixture into a greased and lined lamington pan sprinkle with ¼ cup grated cheese, pop into the oven and enjoy 30 minutes that you have to yourself.
Now you can eat the slice hot or cold, if you are going to use it in tomorrow’s lunch boxes let it cool before taking out of the pan. This way it will set up and be really easy to cut into small portions.
We have used MAGGI Wholegrain 2 Minute Noodles Chicken in this recipe because they are baked not fried and contain 8 grams of wholegrain per pack, making them a great choice for tasty and guilt free lunch boxes.
Preheat oven to 180°C/160°C fan forced. Grease and line a 28cm x 18cm lamington pan.
Cook 2 Minute Noodles according to packet directions (do not add flavour sachet at this stage); drain.
Add zucchini, carrot, flavour sachet and noodles to a large bowl. Mix then add eggs and ¾ cup (90g) of the cheese; mix well.
Pour into prepared pan and sprinkle with remaining cheese; bake for 30 minutes or until golden
