Preparation

Meat Night

Serves: 4 | Preparation time: 10 Minutes | Cooking time: 10 Minutes

SIMPLY ADD:

  • 500g chicken thigh fillets, fat trimmed, sliced
  • 1 medium red capsicum (130g), deseeded and diced
  • 400g can black beans, rinsed and drained
  • 4 cups lettuce (200g), sliced
  • 3/4 cup cheese (90g), grated
  • 1/2 bunch coriander (20g), finely chopped
  • 10 regular tortilla (400g)

GET COOKING:

  1. Marinate chicken with MAGGI Recipe Base and 1 tsp of oil.
  2. Heat 2 tsp oil in a pan, brown chicken for 2 minutes. Add capsicum and cook for 1 minute.
  3. Add black beans and ½ cup (125ml) of water. Simmer uncovered for 5 minutes or until chicken cooked through, stirring occasionally.
  4. Warm tortilla according to packet directions. Serve chicken mixture on warmed tortillas with lettuce, cheese and coriander. Enjoy!

No need to add extra salt.

Recipe Tip: Serve with sour cream and a squeeze of lime.

Veggie Night

Serves: 4 | Preparation time: 10 Minutes | Cooking time: 10 Minutes

SIMPLY ADD:

  • 1 medium red capsicum (130g), deseeded and diced
  • 400g can pinto beans, rinsed and drained
  • 400g can black beans, rinsed and drained
  • 1 cup frozen corn kernels (160g)
  • 2 medium avocado, mashed
  • 1/2 bunch coriander (20g), finely chopped
  • 10 regular tortilla (400g)

GET COOKING:

  1. Heat 2 tsp oil in a pan, add capsicum and cook for 1 minute. Add black and pinto beans.
  2. Add combined ½ cup of water (125ml) and MAGGI Recipe Base, bring to the boil, stirring.
  3. Add corn and simmer uncovered for another 3 minutes.
  4. Warm tortilla according to packet directions. Serve with warmed tortilla, avocado and cilantro. Enjoy!
