Preparation

SIMPLY ADD

  • 500g chicken thigh fillets fat trimmed, cut into thirds
  • 1 large onion (200g), sliced
  • 1 large sweet potato (400g), coarsely chopped
  • ¼ cup tomato paste (55g)
  • 165mL can light coconut milk
  • ½ cup Greek-style yoghurt (140g)
  • 4 cups fresh or frozen mixed vegetables (400g)

GET COOKING:

Slow Cooker | Preparation time: 10 Minutes | Cooking time: 8 hours

  1. Place onion, sweet potato and chicken in the slow cooker.
  2. Pour combined tomato paste, coconut milk and MAGGI Recipe Base over chicken.
  3. Cover and cook on LOW for 8 hours. Serve with steamed mixed vegetables and topped with yoghurt. Enjoy!

Oven | Preparation time: 10 Minutes | Cooking time: 105 minutes

  1. Preheat oven to 180ºC.
  2. Place chicken, onion and sweet potato in a large ovenproof dish
  3. Stir in combined tomato paste, light coconut milk and ½ cup (125mL) water and MAGGI Recipe Base. Cover with lid or foil.
  4. Bake for 1½ hours or until chicken is cooked, stirring twice during cooking. Serve with steamed mixed vegetables and topped with yogurt. Enjoy!

No need to add extra salt.
