Preparation time: 15 Minutes | Cooking time: 20 Minutes


  • 500g skinless chicken breast (consider free range), diced
  • 1 medium (150g) onion, diced
  • 2 tbsp tomato paste (40mL)
  • 1 cup lite coconut milk (250mL)
  • 1 medium red capsicum (150g), sliced
  • 150g green beans, trimmed and halved
  • 4 tbsp natural, low fat yoghurt
  • 2 cups cooked long grain rice (380g)


1. Mix together mince, egg and breadcrumbs. Shape into 16 balls, each approximately 5cm in diameter.
2. Heat 2 tsp oil in a pan, brown meatballs. Add onion, cook for 2 minutes.
3. Add combined tomatoes, ΒΌ cup (60mL) water and MAGGI Recipe Base. Bring to the boil. Cover and simmer for 10 minutes or until meatballs are cooked
through, stirring occasionally. Serve over cooked pasta. Enjoy!

No need to add extra salt.
