Meat free Monday made easy! MAGGI Marketplace Mediterranean Pilaf with Brown Rice & Quinoa Recipe Base is made with natural ingredients and real herbs and spices.
Inspired by the flavours and recipes of Mediterranean cooking it’s perfectly blended with oregano, rosemary and thyme and assures a great tasting meal everytime. Suitable for vegetarians, flexitarians and anyone who loves delicious home made meals.
1onion, finely diced
2 smallred capsicums
500gpre-cooked rice & quinoa
- NB. If using un-cooked rice & quinoa, cook 1 cup in 2 cups of water for 25minutes, or as per pack instructions & use in step 3.
How to Make
Serves: 4 | Preparation time: 10 Minutes | Cooking time: 25 Minutes
Preheat oven to 200 degrees
Heat 1 tbsp oil in a large frying pan. Cook onion and mushrooms for 5 minutes or until golden. Add capsicum and zucchini and cook for a further 4 minutes or until vegetables are tender.
Add pre-cooked brown rice & quinoa to frying pan. In a small jug combing MAGGI Recipe Mix and 1 cup (250mL) water; add to frying pan.
Transfer to a small baking dish, crumble feta on top and place in over and bake for 10 minutes or until water had evaporated. Serve.
