Just Add

    onion, finely diced
  • 200g
    mushrooms, sliced
  • 2 small
    red capsicums
  • 2
    zucchinis, diced
  • 500g
    pre-cooked rice & quinoa
  • 100g
    reduced-fat feta
  • NB. If using un-cooked rice & quinoa, cook 1 cup in 2 cups of water for 25minutes, or as per pack instructions & use in step 3.

How to Make

Serves: 4 | Preparation time: 10 Minutes | Cooking time: 25 Minutes

  1. Preheat oven to 200 degrees

  2. Heat 1 tbsp oil in a large frying pan. Cook onion and mushrooms for 5 minutes or until golden. Add capsicum and zucchini and cook for a further 4 minutes or until vegetables are tender.

  3. Add pre-cooked brown rice & quinoa to frying pan. In a small jug combing MAGGI Recipe Mix and 1 cup (250mL) water; add to frying pan.

  4. Transfer to a small baking dish, crumble feta on top and place in over and bake for 10 minutes or until water had evaporated. Serve.
